Fried Chicken Fruit Salad

My mother was known for her famous fried chicken and fruit salad. She would always add fresh fruits to her classic chicken dish, making it not only delicious, but also healthy and filling.

Growing up, I was always eager to help my mother in the kitchen, especially when it came to making her signature dish. I learned how to perfectly season the chicken and how to chop the fruits just the right way to create the perfect balance of flavors in the salad.

Every time we had friends or family over for dinner, my mother’s fried chicken fruit salad was always the star of the show. People were always amazed at the combination of savory and sweet flavors and would often ask for the recipe. My mother would always proudly share it with a smile, but would also add that the secret ingredient was the love she put into each dish.

Even now, as an adult, I still enjoy making my mother’s famous fried chicken fruit salad and it always brings back fond memories of my childhood. The dish may be a little unconventional, but it’s a staple in my household and always a hit with whoever I make it for.

Ingredients:

  • 4 chicken drumsticks (or any other part of the chicken, if you prefer)
  • 2 cups of all-purpose flour (or any other type of flour you have on hand, as long as it’s not self-raising)
  • 2 teaspoons of paprika (or more if you like your chicken extra spicy)
  • 1 teaspoon of salt (or less if you’re on a low-sodium diet)
  • 1 teaspoon of black pepper (or less if you don’t like it too spicy)
  • 1 teaspoon of garlic powder (or more if you love garlic)
  • 1 teaspoon of onion powder (or more if you love onion)
  • 1 teaspoon of dried thyme (or more if you love thyme)
  • 1 teaspoon of dried basil (or more if you love basil)
  • 1 teaspoon of dried oregano (or more if you love oregano)
  • 2 eggs (or more if you love eggs)
  • 2 cups of breadcrumbs (or more if you like your chicken extra crunchy)
  • 1/2 cup of vegetable oil (or more if you like your chicken extra crispy)
  • 4 cups of mixed fruits (or more if you love fruit)
  • 1/4 cup of honey (or less if you’re on a low-sugar diet)
  • 2 tablespoons of lemon juice (or more if you love a tart taste)
  • 1/4 cup of chopped fresh mint (or more if you love mint)

Instructions:

  1. Preheat your oven to 400°F (or preheat your grill if you’re feeling adventurous).
  2. In a large bowl, mix together the flour, paprika, salt, pepper, garlic powder, onion powder, thyme, basil, and oregano.
  3. In another bowl, beat the eggs until they’re thoroughly scrambled.
  4. Place the breadcrumbs in a third bowl.
  5. Dip each chicken drumstick (or any other part of the chicken you prefer) into the flour mixture, then the eggs, and finally the breadcrumbs.
  6. Heat the vegetable oil in a large pan over medium heat.
  7. Fry the chicken until it’s golden brown on both sides (or until it’s as brown as you like it).
  8. Place the fried chicken on a baking sheet and bake in the oven for 20 minutes (or until it’s fully cooked).
  9. While the chicken is baking, mix together the mixed fruits, honey, lemon juice, and chopped mint in a large bowl.
  10. Serve the fried chicken on a bed of fruit salad and enjoy!
