Crispy Cereal Peppermint Crunch ~ Chex Peppermint Muddy Buddies ~ Noreen’s Kitchen



Just a few more days till the big day! Today I want to share a great, quick and easy treat from the kitchen that you can make to share with family and friends during this festive time of year! This is a great snack to put out on a buffet for an open house or share at a potluck or party. This crispy cereal peppermint crunch is fun and delicious.

Many of you may be familiar with the Chex cereal “Muddy Buddies”. This is a riff on that. There is no peanut butter here, just chocolate and peppermint. However I added a half cup of both the Andes mint chips as well as the Andes peppermint crunch for a fun and festive touch. I also added some regular Andes mints broken up in the mix because I had them and this also lets everyone know there is mint in this snack mix.

This process is super easy! Just melt your chocolate with a bit of coconut oil, in the microwave until it is smooth and melty. Then add your peppermint extract and stir. At this point your chocolate may seize a bit. So return to the microwave for a few seconds and add another teaspoon or so of coconut oil and stir to bring it back to the proper smooth and melty consistency. Then dump all the chocolaty goodness over your dry cereal and stir, stir, stir, stir, stir. Make sure all the cereal pieces are coated. Then put all the coated cereal into a bag with some confectioner’s sugar. Then seal the bag and shake, shake, shake, shake! You want to be sure all the cereal pieces are covered in the sugar.

Then I just tossed in the andes chips and candy cane crunch and poured it into a bowl. Easy! Ready to serve and enjoy!

You can store this in an airtight container or a zip top bag for up to two weeks. If it lasts that long. You can give this as gifts in cello bags or mason jars for a fun and festive greeting, this holiday season!
