Why should kids have all the fun? Jax helps us forget forks and try these poppable pancakes.
2 cups all-purpose flour
2 Tbsp sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
2 cups buttermilk
2 large eggs
3 Tbsp unsalted butter, melted
Maple syrup for dipping
1.) Preheat oven to 400ºF.
2.) In a mixing bowl, whisk flour, sugar, baking powder, baking soda and salt.
3.) In a separate large bowl, whisk together the buttermilk, eggs and melted butter. Pour the wet mixture into dry mixture. Mix until slightly lumpy. Allow batter to rest for two minutes.
4.) Prepare mini-muffin tins with nonstick cooking spray. Fill each cup about ⅔ full. Add toppings in rows: a row of blueberries, a row of raspberries, a row of bacon. Bake 10-12 minutes.
5.) Let cool, then serve with maple syrup for dipping. (You can also brush the tops with melted butter and add cinnamon sugar, or sprinkle with powdered sugar.)
