Aloo Vadiyan or Aloo Vadi Sabji is delicious Punjabi dish best enjoyed with garam garam roti. I’ve also added besan pakore in this dish to give it more texture and flavour. Try this dish in your kitchen and leave a comment as to what you think.

1 cup Besan Pakore
1 cup crushed tomatoes
1 small chopped onion
2 tbsp oil
1 tsp cumin seeds
1 tbsp ginger garlic paste
Salt per taste
1 tsp turmeric
1 tsp red chilli powder
Garnish with cilantro leaves
1 tsp Kasoori Methi/Dried Fenugreek Leaves
1. Heat Oil and add cumin seeds
2. Add onions, ginger garlic and spices. Mix well.
3. Add Vadiyan and Pakore and fry for few mins. Add Potatoes. Mix well. Add tomatoes and combine all ingredients.
4. Add just enough water to cover the potatoes and cook for 2 whistles.
Once the cooker has cooled down, open and sprinkle kasoori methi and garnish with cilantro leaves before serving.
